Apple Cinnamon Bread Pudding
We had this mouthwatering pudding at our gathering. It was sweet without being cloyingly sweet and yet the texture was just right! Here’s the recipe, courtesy of CY!
Ingredients:
“This is so good! How did you do this, CY? Can you give me the recipe? Hey guys, try it quick before it’s all gone!”
- 7-8 pieces wholemeal bread, cut into small cubes
- 2 red apples, peeled and cut into small pieces
- ½ cup raisins
- 1 tsp cinnamon powder
- ½ tsp vanilla essence
- 1 can low-fat evaporated milk
- 2 eggs, beaten
- ½ cup olive oil (plus a little bit more for sautéing the apples and raisins)
- 1-2 tablespoons of brown sugar
Directions:
- Preheat oven to 175 degrees C (350 degrees F). Grease a 7×11 inch baking dish.
- Sauteed the apples and raisins with some olive oil. Put in the same dish as the cut bread.
- In a small saucepan over medium heat, combine the brown sugar, milk, and the ½ cup olive oil.
- Pour over bread mixture in bowl.
- In a small bowl, whisk together cinnamon, vanilla, and eggs. Pour egg mixture over the bread mixture. Stir and mix everything well.
- Bake in preheated oven 30-40 minutes, or until center is set.

The Power of Stories
Everyone loves stories; we find ourselves automatically drawn to them. Somehow we are hard-wired for stories deep inside our brains.
Night of Fellowship
Special childcare arrangements were made for the adults to gather for a night of fellowship. There was a rallying cry for more connection time where EV adults could have some ‘adult down-time’ together. Aunts, grandparents and spouses all rolled up their sleeves & gave their support & blessings.
